1. What is Sodium Citrate?
Also known as trisodium citrate, sodium citrate, trisodium citrate, it is an organic acid sodium salt. The appearance is white to colorless crystals, with a cool salty taste, and stable in the air. The chemical formula is C6H5Na3O7, soluble in water but insoluble in ethanol. The aqueous solution has a slight alkalinity.

3. How to use Sodium Citrate?
The addition ratio in the application of food additives: According to the GB 2760-2014 food safety standard, the maximum usage amount in beverages is 3g/kg, and in jam it is 5g/kg.
Dissolving steps: It is recommended to dissolve in warm water (40-50 ℃) first, and then mix with other ingredients to avoid direct contact with high concentration acidic substances.
In the preparation of medical anticoagulants, the formula for transfusion solution is to add 2.2g sodium citrate+0.8g citric acid per 100ml of physiological saline (WHO guidelines).
Operation points: It needs to be prepared in a sterile environment and used immediately. If stored for more than 24 hours, the pH value should be tested to ensure it is within the range of 4.5-5.5.
